Poke Salad

Around here it's just called poke. Farther north it's called pokeweed. Even farther north, among the tundra dwellers, it is likely unknown. South of here it's called poke salad. 'Salad' is in the older sense of the word meaning 'cooked greens'. It is a contraction of the Latin phrase herba salada, 'salted herbs.'
It is a hearty perennial that grows from a root often as big as a man's forearm so when it breaks dormancy in the spring, it quickly puts up thick, fleshy shoots. The stalks are sometimes cut into pieces, dredged with meal, and fried much as is done with okra (oh, that's right, if you aren't used to eating poke, odds are you aren't used to eating fried okra either). When the plant is older, the leaves are cooked like spinach, which they remotely resemble in taste. Our favorite way of preparing poke is to cut the early shoots leaves and all, chop them coarsely, and steam them or boil them as one would do asparagus, which taste they remotely resemble.
It isn't good raw. Raw poke is harsh and astringent. As the plant grows older, it develops mild toxins which can give you a good stomach upset so it's an early spring delicacy to be enjoyed in its season.
Poke is most often reckoned a weed and anyone doing battle with it in garden or lawn has squared off against a worthy adversary. Another 'weed' that makes itself know this time of the year is annual lambs quarter seen in the lower right of the above photo. I can't imagine there's a place anywhere it wouldn't grow.
I was looking into the nutritional content of various foods available to us and it is amazing to consider that the vitamin, mineral, and phytochemical content of some vegetables is so much higher that most of what we eat: kale, broccoli, and spinach stand out. But then I came across the nutritional information for some of our favorite wild foods: plantain, dock, fiddle heads, dandelion, purslane, cress, etc. and it is more amazing still to find that those foods have phytochemical and vitamin content far, far above any cultivated food in the garden. Lambs quarter is like that, as is poke. Poke even contains a substance called Pokeweed Anti-viral Protein (PAP) which is being studied as a treatment for AIDS.
As we enjoyed this year's poke, I thought about the nutritional poverty of the modern diet. Many people I know have never eaten more than an incidental vegetable and many have never tasted a bit of cooked greens, even finding the prospect revolting. Really nutritionally outstanding wild foods are all but unknown.
Glad to be pulling up my chair around the free man's table. Pass the poke salad!

We call it Poke Salat, spelling Salad with a T instead of a D. I'm not sure how that came about. I have a lot of it growing here but I've never tasted it. I do however love cooked okra so may I go cut me up some of that for lunch.
I've seen that spelling and also sallet all of which are historical ways of spelling salad.
The lamb's quarters is more commonly known up here as pigweed, I think. I didn't realize you can eat it. I'll have to drum up some bravery and try that.
I liked learning about poke salad. I do believe I have some poke growing in my yard.
Interesting. What we call 'pig weed' around here is related to artichokes. I've seen amaranth called pig weed as well.
What I'm calling lambs quarters is Chenopodia Alba (White Goosefoot) and is botanically related to spinach and beets.

I'll have to check out the seeds, since the spinach and beet seeds are so distinctive. I try not to let them get to that stage!

What we plant for a beet seed is actually a seed cluster, the individual seeds are tiny.
Lambs quarter seeds are small, hard, black (the variety that grows around here), and plentiful.
Stinging nettles are very good early in the season, too, and they grow up here on the barren plains. (They do need just a little boiling to take the sting out first!) Lamb's-quarters are delicious, mum - go for it! My mom used to gather up a potfull and steam them a little, but I like to just nibble the fresh leaves as I go by.
I was out working in the garden this afternoon and picked some and chewed. It was lovely! It reminded me of very new pea-pods.

Hearty thanks for mentioning dock as a comestible.
To date, I've used it only to bust up hardpan in a planned 4' x 16' vegetable bed. Before purposedfully planting the area to dock, my spade could plunge no deeper than 2 inches on one end and 4 inches on the other.
But, all that's about 5-6 years ago. Now that bed's about my best producer (this year planted to carrots, basil, coriander (only for seed production), early bush beans, with florence fennel bulbs still holding and into their 3rd year from seed). But, dock continues to push up around much of the yard.
But, now, it goes into the "eater" category.

Nice blog, Eleutheros. I just came over here from your excellent How Many Miles From Babylon? blog, which an email correspondent recommended to me just today.
I like poke salad mixed in with an assortment of other garden greens (I've got collard, mustard, and turnip growing right now--and spinach, but I prefer that raw).
I've heard that poke is toxic if you eat it raw, but never heard that about the toxicity of the older plant. I've heard a lot of people complain of its harsh taste when old, but that never bothers me when it's used to season other greens. I've picked large leaves from a poke bush as high as my head, and mixed them in with a pot of greens, and never had a bad reaction to them.
It's funny how the names of common plants vary by region, btw. I read Ruth Stout's book on no-till gardening, and was puzzled by her repeated references to the trouble she had with "witch grass" sending runners under the mulch. Took me a long time to figure out, from the description, that witch grass is (apparently) the New England name for what we call Bermuda grass down here.

I noticed your picture of poke and lambsquarter. Around here (northern Missouri), the main poke harvest is usually over before the lambsquarter comes along that big.

I was thrilled to find a poke plant on our property day before yesterday, and just have one or two questions.
Do you propagate yours and grow it in the garden, or do you collect it in the wild? Sorry - rereaing your post, I am still unclear on this. If you do propagate it, how so?
Second, how can one tell when the plant has passed its prime and is now in the "stomach upset" column versus the "good in its season" column?
I have only found just the one specimen, in the newly-sunny spot where an old oak was felled by a hurricane 2 or so years ago. I don't want to destroy the plant without a plan to have access to more. Alas, it seems to be kind of rare around my neighborhood.

ThingFish, as luck would have it I'm on a rare visit here thinking about posting some things.
I've never propagated poke as it is a rank weed here and grows everywhere in profusion. It comes up readily from the berries and I can't imagine a chunk of the root not sprouting. The root, by the bye, is quite poisonous.
A good guide as to palatability is the color. Red indicates that the toxins have begun, use the green parts. The plant can be quite large and if you just take the leaves and shoots that have no red on them, you will be fine.
You can also cut a large plant down even with the ground and it will resprout any time during the season.

DAmn...that makes me so hungry. Grew up in Eastern Ok where there is lots of Poke growing. My mother would cook it down and can it. Used to fry it up slowly then scramble eggs into it. Delicious. I really miss those days, now I am a city dweller and homesick. Ever eat the Morrel mushrooms? Those are killer!!
